I could not resist. I had to make this because I was craving chicken wings like crazy. There’s no need to go out and buy wings when you can make them at home. I use my recently created Jamaican seasoning to make them. With this recipe, we travel to the Caribbean. If you count the brine, the burst of flavor is actually tripled. To make the chicken wings extra fluffy on the inside, I brined them. Although not mandatory, if you have the time, I strongly suggest it.
The flavor of these jerk chicken wings is amazing. Although not “hot”, they have an excellent Caribbean flavor and are deliciously peppery. They are definitely warming up. I’ll cover seasoning in more detail if you want to significantly up the spiciness level of the post.
First, use paper towels to dry your chicken wings. Then, coat them liberally with your Jamaican jerk seasoning. Feel free to use your favorite brand if you prefer; I made a fresh mix by hand. Learn more about the seasoning mix below. Next, preheat your grill to medium-high heat and quickly oil the grates. The wings are grilled instead of fried. No offense to fried. Simply put, depending on my mood, I like them grilled, baked, or broiled. Grill the wings for 10 minutes on each side or until cooked through.
While you can sometimes get a great jerk spice mix at your local grocery store, it’s always best to make your own. Even though there are many ingredients, it is still worth making because of how fresh it tastes. Plus, you can customize it to your tastes by including more of what you like, like cayenne pepper, for extra heat. You can also add ghost chili powder to really kick it up a notch.
