Try This Delicious Easy Baked Fish and Pineapple Salsa Recipe

How delicious does that look? The UK Cooperative Extension Office has an incredibly simple and affordable recipe that will allow you to feed the whole family for under $12. Here’s how to make the incredibly delicious Fish and Pineapple Salsa. You will love.


Non-stick cooking spray

1 1/2 pounds fish fillets (any mild flavored fish like tilapia, catfish, cod, etc.)

1 teaspoon unsalted herbal blend

2 tablespoons butter, melted

Juice of 1 lime (optional)

When Katie Alexander from the Daviess County Cooperative Extension Office joined us on the show, she had used frozen tilapia for the recipe. It cooks perfectly. Here are the instructions she shared.

Preheat the oven to 400 degrees F.

Coat the inside of a 9 x 13 pan with nonstick spray.

2. Arrange the fish fillets in a single layer in the pan.

3. Sprinkle the herb mixture over the fish.

4. Pour the melted butter over the fish.

5. Finish with a squeeze of fresh lime juice.

6. Cover the mold with aluminum foil.

7. Bake for 20 minutes or until the fish flakes easily with a fork and has reached an internal temperature of 145 degrees.

Now here comes the super tasty part! Katie and UK Cooperative Extension recommend serving this fish with pineapple salsa.

Here’s how to do that!


1 can (20 ounces) pineapple chunks, drained

1/4 red onion, finely chopped

1/2 small jalapeño pepper, finely chopped and seeded

2 tablespoons lime juice

2 tablespoons cilantro or parsley (optional)

Katie chose to use parsley in her dish. Full disclosure, I’m not a big fan of jalapenos (or peppers of any kind) so I plan to omit them altogether.

1. Gently rub red onion and jalapeno pepper under cold running water before preparing. Rinse the cilantro under cold running water and pat dry before chopping.

2. Drain the pineapple. (The juice can be saved for drinking.)

3. In a medium bowl, combine pineapple, onion, jalapeno, lime juice, and cilantro or parsley.

Then serve it on the side!
