Roscoe’s Serves Kansas City BBQ Recipe

Roscoe Davis is being held at his new barbecue facility in Edwardsville, Roscoe’s BBQ, 9711 Kaw Drive. Roscoe’s opened on October 23.

When the disadvantaged economy caused Roscoe Davis to be fired in the printing industry last March, he had decisions to make.

What direction would he take his life? And would it be printing, or some other passion that left him with a better taste in the mouth?

Luckily for Edwardsville, Davis chose the latter and as of October 23, the town is now home to Roscoe’s BBQ, located at 9711 Kaw Drive.

“It has always been a passion for me,” said Davis. “I have always been a good cook.

Since being made redundant, the Wyandotte County resident has operated a small restaurant business out of his home. When a friend told him about a restaurant space that became available, Davis finally jumped at starting his lifelong dream.

Roscoe’s BBQ, which occupies the former Godfathers Pizza building, is packed with barbecue knowledge Davis has amassed over the past 10 years at competitive barbecue competitions.

It was Davis’s sons who wanted him to start competing, and the family business grew from there. Davis’s family and several road trips across the country have given him the opportunity to say his barbecue won’t be for everyone.

The sauce used at Roscoe’s BBQ was developed eight years ago.

Davis visited several places known for their barbecue, such as Memphis and St. Louis, tasting his options before deciding on the best style of barbecue at his home.

He started testing recipe after recipe and said a lot of product was thrown away before choosing the perfect mix.

“Now I have my own Kansas City style barbecue,” Davis said. “I found a recipe that I think has a bit of all (other cities). “

On opening day, Davis said a line had formed all the way to the restaurant door. And since his sign was on even before that date, Davis said passing truckers honked their horns and waved their hands.

“The community has been very good in supporting and helping us,” said Davis. “It was amazing.”

Davis said he had had several customers who had already eaten at the restaurant five or six times since opening day.

“Once people try it, people come back for more,” he said.

Davis said it’s hard to decide what her favorite dish on the menu is. He said the restaurant’s specialties are ribs and beans, but he can’t forget the many sandwiches he invented.

Roscoe’s barbecue is open 11 a.m. to 8 p.m. Monday through Saturday. For more information, call 422-4600.

“It’s a dream come true. It’s the passion of my life to have a restaurant, ”said Davis, adding that he had found his calling and would not be returning to the print shop anytime soon.
