Recipe: Baked Eggs with Bean Sauce

Ingredients of baked eggs with beans in sauce to make two servings

  • 2 x 400g cans of cherry tomatoes
  • 400 g mixed bean salad, drained
  • 200g baby spinach
  • 4 medium eggs
  • 50g thinly sliced ​​smoked ham, torn
  • 2 slices of wholemeal bread, for serving

Method

  1. Pour the tomato and bean salad into a skillet or ovenproof casserole dish and simmer for 10 minutes.
  2. Stir in spinach and cook for five minutes, until softened.
  3. Heat the grill to medium heat.
  4. Make four indentations in the mixture with the back of a spoon and crack an egg into each.
  5. Spread the ham evenly in the mixture and broil for four to five minutes, until the egg whites are set.
  6. Serve with bread on the side.
