Rachael Ray just shared an easy balsamic chicken marinade – SheKnows

It’s summer, and for us that means one thing: it’s grilling time. We’ve lit our grill for dinner most nights, and while we love making classics like Ina Garten’s BBQ ribs, burgers, and hot dogs, sometimes we want a meal with different flavors. We also need to watch the budget, as grilling steaks and other fancy cuts can get expensive. That’s why we love this Rachael Ray Balsamic Marinated Chicken Thigh Recipe. Not only does it have a slightly different flavor profile than your standard barbecue, but it also uses chicken drumsticks, which are still one of the cheapest meats you can buy in the grocery store. It is a victory for us.

The key to making chicken taste super tasty is to let it marinate for at least a few hours, or overnight if you can rock it. The marinade is made with balsamic vinegar, savory Worcestershire sauce, garlic, red pepper flakes or Calabrian chili paste and olive oil. It has the perfect balance of sweet, tangy, and salty as you would expect from any barbecued food, but it’s a nice change from the typical barbecue sauce.

To cook your chicken, shake the excess marinade (so it doesn’t burn), then grill it over medium-high heat, turning occasionally to cook evenly. If you don’t have a grill, you can also roast the chicken in a 400 degree oven (but we love the extra flavor a charcoal grill gives).

Pair it with your favorite summer vegetarian sides (Ray serves these drumsticks with a salad of green tomatoes and grilled corn), and you’ve got a tasty and healthy dinner that’s a refreshing change from the usual barbecue food that you’ve eaten all season.
