Sing it with me…sloppy joes, slop, sloppy joes, come on…and you’re welcome if you have that in mind the rest of the day. It’s a great song for a great lunch, even if it’s loaded with sugars and simple carbs prepared in the traditional lunch ladies way. We can do better.
Back in my BC days (bad carbs), a sloppy joe meant ground beef drowned in a box of Manwich, served on a white hamburger bun and not one but two slices of melted American cheese, plus a big spoonful of mayonnaise for good measure. Of course, I couldn’t have a sloppy joe without a greasy portion of fries and a diet coke. Nutritionally speaking, Lunch Lady Land is a disaster. It’s time to take her back to school and teach her a new way of doing things. A sloppy joe can be a quick and healthy lunch. It just takes a bit of rehab and some easy-to-find substitutions.
The first thing to do is canned Manwich sauce, or whatever other poison you have chosen on your shopping list. Manwich’s ingredients list sugar twice (back!), which is just insane. First, it’s listed as high fructose corn syrup as the second ingredient, which means there’s a lot of it. Then later in the list, real sugar is listed. Of course, all the weird preservatives and chemicals are there too, and none of that is good. All you need to replace that box of gunk is clean barbecue sauce and no-sugar-added ketchup, both of which are easy to find at the mega-mart or make your own. I use half a cup of each and it’s perfect every time.
I swap white bread burger buns for my healthy homemade tortillas, my traditional mayo for an avocado oil-based mayo, and ground turkey instead of ground beef. Other than a can of diced green chiles, chopped red onions and some spices, that’s all there is to it. My Baked Jicama Fries are a perfect substitute for greasy fried potatoes. Do all of this and you can jump and dance like the Lunch Lady to your heart’s content, but you won’t be out of breath with your hands on your knees when you’re done. Now hit that power chord on the guitar, rock out to the song, and get ready.

Sloppy Joes redone:
1 lb ground turkey
1/2 cup barbecue sauce
1/2 cup ketchup
1/2 teaspoon sea salt, pepper, onion and garlic powder
1/2 red onion, finely diced
1 can diced green chillies
Shredded Grass Fed Cheddar Cheese
Primal Kitchen Avocado Oil Mayonnaise
Dice the onion and open the green peppers:
Heat a large skillet over medium heat and cook the ground turkey with the spices. Once the meat begins to brown, add the onion and peppers:
Once the meat is fully cooked, place it in a colander and squeeze out the fat and juices until the meat is dry. Return to pot and stir in barbecue sauce and ketchup, heat to reheat:
Warm a tortilla and spread a thin layer of mayonnaise. Sprinkle with some cheese and cover with the sloppy joe mixture. Top with more cheese and a few crumbled black bean chips if desired:
