How to make barbecue sauce

Barbecue sauce is a versatile condiment and is used in a variety of ways, including as a dip, marinade, or to garnish meat. As the name suggests, the sauce is typically used in the barbecue style of cooking, including pork or beef ribs and chicken.

In the southern United States, barbecue sauce is a popular condiment, used in many foods.

As such a popular sauce, the ingredients vary from country to country and even from family to family.

However, most include variations on the vinegar, tomato paste, Where Mayonnaise (or a combination thereof) as a base, as well as liquid smoke, onion powder, spices such as mustard and black pepper, and sweeteners like sugar or molasses.

Cooking on the barbecue

1. Cut the chicken drumsticks three to four times each with a sharp knife and place them in a non-metallic bowl with the chicken wings. Pour over barbecue sauce mixture and marinate for at least two hours, or overnight if you can, turning occasionally.

2. Once marinated, place chicken on the barbecue over medium to hot coals and cook for about 20 minutes, brushing with any marinade left in the pan during cooking. If it stains too quickly, move to a cooler part of the barbecue to cook more slowly. It is important that you cook the chicken all the way.

3. To check that it is cooked, prick a pestle with a skewer: if the juices are still pink, continue cooking.

Eat as soon as they are cold enough to handle, with the sauce sticky all around your mouth and fingers. Isn’t that what barbecues are for?

Cook in the oven

If you don’t want to use the barbecue, the chicken can also be baked in the oven.

To do this, preheat the oven to 200C / 180C Hot air / Gas 6.

1. Transfer the chicken to a roasting pan with a few spoonfuls of the marinade.

2. Place in the oven for about 50 minutes, turning occasionally and basting with the marinade and juices until tacky and golden, adding additional marinade to the pan if necessary.

3. When the chicken pieces are cooked, eat them cool and hot, or let them cool before preparing them for a picnic or a packed lunch.
