Grilled Chicken with Pig Beach BBQ Sauce

Chef’s Notes

I love this barbecue chicken recipe because it just screams summer and reminds me of my youth! It’s also a great crowd pleaser.

For the all-purpose barbecue seasoning:

Combine all the ingredients in a mixing bowl, then transfer to a food processor and mix until all the ingredients are incorporated evenly. Put aside.

For the Pig Beach barbecue sauce:

In a medium saucepan, combine all the ingredients with a hand blender, then bring to a boil over medium-low heat. Reserve in the fridge.

For the chicken:

Clean, oil and preheat your grill (gas or charcoal) on medium heat.

Aggressively season your chicken with All Purpose BBQ Seasoning and let sit for 10 minutes to bring out the flavors of the spices and marinate the chicken.

Place the chicken skin side down and cook for 5 minutes (be careful that your grill is not too hot or you will burn the skin). Flip the chicken and continue cooking for another 5 minutes or the internal temperature of the chicken reaches 145 ° F.

Once the chicken has reached this temperature, transfer the chicken to the upper grill rack (or reduce the heat to low), drizzle liberally with Pig Beach barbecue sauce and continue cooking to create a caramelized glaze and allow the chicken to set. reach an internal temperature of 160 ° F.

Once the chicken reaches 160 ° F, remove from the grill and let the chicken rest for 5 to 10 minutes before serving (while it is resting, the chicken will continue to cook until it reaches a final temperature of 165 ° F).

Serve with a little extra barbecue sauce to dip the chicken.
