Ingredients:

3 x 1.5 lb packages ButcherBox Flank Steaks or Flank Steaks of your choice

6 zested limes

½ cup chopped cilantro

½ cup minced garlic

¼ cup extra virgin olive oil

1 tablespoon kosher salt

2 teaspoons freshly ground black pepper

For the grill

1 cup hickory wood chips

Directions:

Preheat the charcoal grill with coals placed on one side of the grill.

2. Combine cilantro, garlic, lime zest, salt, pepper and extra virgin olive oil in a large bowl and brush over steaks.

3. Place the hickory wood chips directly over the coals and place the steaks on the grill surface above the charcoal area.

4. Cover the grill and grill the flank steaks for 5 minutes. Turn steaks 90 degrees, cover grill and grill for 5 more minutes.

5. Flip steaks, cover grill and grill 5 minutes longer. Move the steaks to cool part of the grill, cover and continue cooking until the internal temperature on the instant-read thermometer registers 120° f.

6. Let stand at least 10 minutes and thinly slice against the grain. Enjoy!
