Alabama White Sauce Recipe – How to Make Alabama White BBQ Sauce

Caitlin Bensel

unlike others barbecue sauce recipes, you won’t find anything red here! White barbecue sauce, also known as Alabama white sauce, is a regional recipe that many southerners use to dip and dress smoked chicken, pork, and other barbecue dishes. Try it with grilled chicken, grilled ribs or even drizzle it with a spicy barbecue brisket. It’s creamy and peppery, and it’ll change the way you think about BBQ sauce!

What is white BBQ sauce made of?

Alabama White Sauce starts with a base of mayonnaise and apple cider vinegar. Many variations exist, but typical flavorings include mustard, Worcestershire sauce, sugar or honey, garlic and/or onion powder, and lots of black pepper. We like to use fresh garlic, prepared horseradish and a little cayenne pepper to add heat and spice.

What does white BBQ sauce taste like?

The creamy mayonnaise base is balanced with the acid from the vinegar and lemon juice, which keeps it shiny and complements a fatty cut of meat. Lots of black pepper, cayenne pepper, and horseradish (use it if you have it!) give the sauce a kick. The garlic adds a savory note, while the brown sugar works to balance out any bright flavors.

What do you associate with white BBQ sauce?

Smoked chicken wings are the perfect pairing, or serve them with any slow-cooked meat, especially if it’s smoked or grilled. It’s also delicious as a dip for chicken fillets or even fries!
