The Pacific Daily News continues to share recipes through its partnership with 671 Guam Recipes founded by Cel Montague.

This recipe is from member Ernie P. Salonga III, who posted it to the group in December 2016.

Beef rib marinade

  • 2 pounds bone-in beef short ribs
  • 1 cup of water
  • 3/4 cup soy sauce
  • 1/2 onion, sliced
  • 5 calamansi citrus fruits, halved
  • 1 teaspoon sesame seed oil
  • 2 teaspoons mild ginger and garlic seasoning
  • 2 teaspoons brown sugar

Do not cut your meat into pieces, leave them together for the marinade. Be sure to rinse the meat after opening the package. Put aside.

Slice the onion and set aside.

In a large dish, combine the soy sauce, water and sesame oil. Crush the sliced onions with your hands to release the onion flavors, then add them to the liquids in your dish. Add the squeezed calamansi juices, do not discard the skins of the calamansi, add the skins to your dish. Add and mix your mild ginger garlic seasoning and brown sugar. I recommend you add 1 teaspoon at a time and test the taste. Add more to your desired preference.

Add the meat to the marinade and leave for as long as possible, not less than an hour. Rotate the meat to make sure all the strips are well marinated.

On the barbecue, do not overcook, this meat is thin so it should grill in a very short time.

Serve and hear the praise!
